5 Nights of Salad #ONE

BBQ Shredded Chicken, Pear & Goat Cheese Salad

Ingredients

*Serves Two

SALAD

  • 1 Large Romaine Lettuce Heart
  • 2 Thawed Chicken Breasts
  • 1 pear
  • 1/3 cup Goat Cheese, crumbled
  • 1/4 cup chopped walnuts
  • Red Onion (as much as desired)
  • Croutons (optional) 

CHICKEN

  • 1 cup BBQ Sauce
  • 1-2 tbsp Worcestershire sauce 
  • 1 tbsp Italian Seasoning (or season of choice)
  • 1/4 cup brown sugar

DRESSING

  • 1/4 cup olive oil
  • 1 tbsp apple cider vinegar
  • 1-2 tbsp honey
  • 1-2 tbsp dijon mustard
  • 1 tbsp BBQ sauce 
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1-2 pinches salt & pepper

Directions (begin 4 hours prior to dinner)

  • Add chicken breasts & chicken ingredients in slow cooker. Cook 3-4 hours. When done, shred chicken with fork
  • Cut up washed romaine, slice up pear. Then place chicken & other salad ingredients on top
  • Mix all dressing ingredients in bowl, pour over salad
