5 NIGHTS OF SALAD #THREE

POWER SALAD WITH SPICY HONEY VINAIGRETTE

INGREDIENTS:

  • 2 cups chopped Kale
  • 1 cup Spinach
  • 1/2 cup sliced Brussel Sprouts
  • 1/2 head Radicchio, sliced
  • 4-5 radishes, sliced
  • 1/2 cup raspberries
  • 1/2 cup trail mix of choice 
  • 2 servings salmon fillet or chicken breast, grilled 

DRESSING:

  • 1/4 apple cider vinegar
  • 1/3 cup honey
  • 1 tsp Sriracha sauce
  • 2 tsp Soy sauce
  • 1 garlic clove, chopped
  • 1/2 inch fresh ginger, peeled & chopped 
  • 1/2 tsp fresh ground ginger
  • 1 tsp crushed black pepper
  • 1/2 tsp salt
  • 1/3 cup olive oil 

DIRECTIONS:

  • Grill salmon or chicken with olive oil & lemon juice, salt & pepper
  • Chop veggies 
  • For dressing, combine all ingredients in blender & combine until smooth
