5 NIGHTS OF SALAD #FOUR

GREEK SALAD WITH GINGER LEMON DRESSING

INGREDIENTS:

  • 1/2 cup uncooked quinoa
  • 1/2 cup chopped kale
  • 1/3 cup sliced tomatoes (I used a handful of leftover grape tomatoes)
  • 1 small cucumber, sliced
  • 3 Brussels sprouts, uncooked & sliced
  • 1/2 head Radicchio, sliced
  • 1/4 cup feta cheese
  • Protein of choice to mix in (we are using leftover steak from the other night!) 
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 inch ginger root, minced for juice
  • salt & pepper to taste

DIRECTIONS:

  • Cook quinoa with 1 cup water - either boil or you can cook like white rice in rice cooker
  • Chop & combine all veggies
  • Mix lemon juice, olive oil & ginger root juice together. Mix into salad
  • Top with dash of salt & pepper + protein
