Banana Bread

I've been looking for a grain-free recipe & tweaked one that I found on Pinterest... not too brag, but it is prettyyyy amazing :) It didn't rise super well since its almond & coconut flour based, but it's still amazing. Just have 2 pieces instead of one to make up for it ;) 

Ingredients:

  • 1/2 cup almond meal/flour
  • 1/2 cup coconut flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1 tsp coconut sugar (optional but I found this adds a lot to the flavor)
  • 2 eggs
  • 2 bananas, ripe & mashed
  • 2 tbsp coconut oil, melted
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup dark chocolate chips (optional) 
  • 1/4 cup walnuts (optional) 

Directions:

  • Heat oven to 350 degrees. Line a 9x5 bread pan with parchment paper (makes it super easy to take out after it's done) 
  • In small bowl, combine all dry ingredients & mix with fork
  • In medium bowl, whisk eggs & add other wet ingredients. Add the bananas last - cut into pieces & mash with hands before placing in 
  • Combine dry ingredients into the wet ingredients & stir in chocolate chips & walnuts last
  • Pour batter (it will be pretty sticky, not super liquid-y) into bread pan & cook for 35-45 minutes (until toothpick comes out clean)
