Grain Free Date Cake

So a few nights ago, Tylor & I went out for dessert & a drink & had the most AMAZING date cake. I had never tried it before (idk why!) & was like okay cool new favorite dessert. So I wanted to try to make something similar with a health(ier) twist to it!

This is my recipe tweaked off of one I found online :)

Ingredients:

  • 1 1/2 cups paleo flour (or 1 cup almond flour, 1/4 cup coconut flour, 1/4 cup tapioca flour)
  • 1 1/4 cup dates, pitted
  • 1 cup boiling water
  • 1/3 cup coconut sugar
  • 2 eggs
  • 1 tbsp pure maple syrup
  • 2 tbsp grass-fed butter or ghee
  • 1 tsp vanilla extract
  • 1 tsp baking soda

For coconut cream sauce:

  • 2 tbsp butter
  • 1/3 cup coconut sugar
  • 1 cup coconut cream
  • 1 tsp vanilla extract 

Directions:

  • Preheat oven to 350 F & prep a cake tin with coconut oil or parchment paper
  • Place dates & boiling water in a bowl & let sit until dates soften
  • In a bowl (use a mixer if you have one) combine butter, coconut sugar, vanilla & maple syrup together until creamy mixture forms. Then whisk in the eggs
  • In a food processor or blender, combine dates (with the water), flour & baking soda. Pulse a few times until the dates are chopped up (don't worry if the flour isn't fully blended in)
  • Mix the two mixtures together well until flour is all blended in
  • Pour into cake tin & bake 20-30 minutes until fork comes out clean

For Sauce:

  • In a saucepan, melt the butter & mix with coconut sugar. Then add the cream & vanilla & keep stirring for about 5 minutes until it is well blended & thickens a bit

Top cake with sauce & add some ice cream on the side if desired!
